Lauki is a vegetable normally people don't like much. It's called "Mareezon Ki Sabzi" (sick people's vegetable) ! I don't subscribe to this theory. This ordinary vegetable can be cooked in so many different ways overloaded with taste. This version of lauki aaloo is very simple but when you serve with puri and parathas,it turns out extra ordinary! I have served this dish in my puja lunches and people admired this humble sabzi in spite the presence of matar paneer and other delicacies!
Diabetic people can't eat aaloo, so you can go ahead and make it sans aaloo ! You can also make raw papaya following the same procedure and trust me,you will not be disappointed.
Let's start cooking...


Ingredients:

  • Lauki.. 1 small
  • Aaloo..2 medium size (You can omit aaloo if you are making for diabetic person)
  •  Onions.. 3 (peeled and finely cut in omelette style)
  • Tomato.. 1 medium 
  • Coriander powder..1 heaped tsp.
  • Garam masala powder..1 heaped tsp.
  • Turmeric powder..1 tsp.
  • Chilli powder..1 tsp. 
  • Coriander leaves..1 bunch
  • Salt to taste
  • Oil..2 1/2 tsp.

Procedure:

  1. Peel aaloo and lauki and cut them in medium size pieces.
  2. Cut tomatoes in cubes,keep aside.
  3. Heat oil in a vessel and add finely cut onions.
  4. Saute till the onions turn pink.
  5. Add lauki and aaloo with coriander powder, turmeric powder, chilli powder and salt.
  6. Stir for a minute,cover the lid and cook.
  7. When vegetables become soft, add cubed tomato and garam masala powder.
  8. Stir and cover again for 2 minutes.
  9. When water is no more in the sabzi, add chopped coriander.
  10. Transfer in a serving dish and serve with puri, parathas or dal- rice.
  11. Enjoy!
