                  Chayoti Squash Sabzi






Chayoti is a plump, pear shaped squash which is very nutrient. 

Chayote squash boasts a nutrition profile that is loaded with essential vitamins, minerals, and fiber. It may also support a healthy pregnancy, have anticancer properties, and slow visible signs of aging.

It originally hails from central Mexico and various parts of Latin America but is now grown all over the world. It’s also known as mirliton squash or chow chow.

Ingredients:

1- Chayoti squash- 2 peeled and cut into cubes
2- Potato- 1 cut into cubes (Optional)
3- Onion-1 omlette cut
4- Tomato- 1 and 1/2
5- Cilantro leaves- 1/2 cup
6- Cumin seeds-1 tsp.
7- Coriander powder- 1 heaped tsp.
8- Garam masala powder- 1 tsp.
9- Turmeric powder- 1/2 tsp,
10- Red chilli powder- 1 tsp.
11- salt
12- Mustard or refined oil-2 tbsp.

Method:

* Heat oil in a pan or kadai, add cumin seeds.
* Add chopped onion also and saute till translucent.
* Now add cut veggies and all the spices wxcept garam masala, stir and cover.
* When veggies are cooked, add tomato pieces and mix.
* When tomatoes are tender, sprinkle garam masala and chopped cilantro leaves.
* Serve hot with chapatis, puris or parathas.

Today I served it  with Ragi mixed aata chapatis.
