 Soup has been a staple to mankind’s diet since the prehistoric era where it was made as a porridge type dish (Soup). It was even sold in ancient Greek on the streets of Athens.

 
Broccoli is rich in calcium and has antioxidant properties which help prevent some forms of cancer. The same sulfur that can cause gas from over-cooked broccoli also has beneficial antiviral and antibiotic properties.
Broccoli and almonds combined in a soup are divine in taste for soup lovers like my husband, and on his demand, I prepared this delicious soup and very happy with the end result.
 
 
Ingredients:
1- Broccoli florets-2 cups
2- Almonds- 1/4 cup
3- Heavy whipping cream-1/4 cup or less
4-Vegetable stock- 1 cup (I used home made)
5- Butter-2 tbsp.
6- Salt and pepper
7- Garlic cloves-3-4
Procedure:
1- In 1 tsp. butter, toast sliced almonds for aromatic crunch.
2- Do not burn it, keep aside.
3- In the same pan, add rest of the butter and chopped garlic.
4- When it turns pink, add broccoli florets.
5- Saute till 4-5 minutes.
6- Keep aside some pieces for garnish which I forgot this time and add rest of them in boiling stock.
7- Cook them covered till tender.
8- Cool and blend.
9- Again heat this in a pot and add salt and black pepper.
10- Serve hot with toasted almonds, buttery broccoli which was saved for garnish and of course cream.
