                        Royal Mushroom Matar Curry


 

Mushroom has become an integral part of Menu world wide. There are various reasons of its popularity and its meat like texture and taste are some of those. It's an open secret that Mushrooms are a “powerhouse of nutrition” .

 Low in calories and fat and cholesterol-free, mushrooms contain a modest amount of fiber and over a dozen minerals and vitamins, including copper, potassium, magnesium, zinc and a number of B vitamins such as folate. Mushrooms are also high in antioxidants and superb in taste.

Everyone wants to serve a dish lavishly cooked and universally approved in gatherings, or even sometimes for family to just celebrate something and this is my all time go to recipe for taste and also for it's quick and chik preparation. No elaborate cooking, no fancy ingredients; it's an easy peesy recipe.

 

Ingredients:

  1. Button Mushroom-8 oz. or 1 cup (Cut into halves)
  2. Green peas-1 cup ( I use frozen sweet peas)
  3. Bay leaf-1
  4. Onions-2 medium (Omelet cut)
  5. Ginger-garlic paste-1 tsp. (I use fresh)
  6. Tomato-2 (Chopped)
  7. Kasoori Methi-1 tbsp.
  8. Garam masala powder-1 tsp. ( I use store bought)
  9. Red chilli powder-2 tsp.
  10. Kashmiri chilli powder-1 tsp.
  11. Coriander powder-1 tsp.
  12. Turmeric powder-1/4 tsp.
  13. Salt
  14. Coriander leaves-3-4 sprigs
  15. Cashews-5 (Ground and soaked in 3 tbsp. water)
  16. Milk-1 cup
  17. Oil-3 tbsp.

Method:

  • Clean mushrooms and keep aside.
  • Heat oil in a pan and throw bay leaf.
  • Stir for a moment and remove it.
  • Now add finely chopped onions, fry till light brown.
  • Add ginger-garlic paste and stir till the rawness is gone.
  • Add tomatoes and all the dry spices, salt except kasoori methi.
  • On low medium heat, cook it stirring occasionally till it separates oil.
  • Add mushroom and peas and increase the heat.
  • Cover and cook till peas are very tender and mushrooms have shrinked in size.
  • Add cashew paste and cook for 2-3 minutes stirring often.
  • Lower the heat or turn off while you add milk.
  • Cook for 2-3 minutes, add kasoori methi and turn off the stove.
  • Garnish with cilantro or coriander leaves. 


 Note: I have named this curry Royal not only because of it's taste and appearance, but also for it's hassle free preparation which makes YOU royal!

Enjoy with puris, parathas,rice,naan, pulao or tandoori roti.
