                             Pineapple Cheesecake






 
I'm very happy to share the recipe of this cheesecake, which I got from my elder sis-in-law. No bake,no egg recipe is so delicious that our whole family is fond of this. I have not seen any recipe on the net which  comes close to it in procedure and taste. We eat it without garnishing with whipped cream and cherry, because it is heavenly in itself. 

  Cheesecake is believed to have originated in ancient Greece. In fact, a form of cheesecake may have been served to the athletes during the first Olympic Games held in 776 B.C. to give them energy. Greek brides of the era also cooked and served cheesecake to their wedding guests.

 

Ingredients:

  1. Graham cracker crumbs-2 & 3/4 cup
  2. Cream cheese-3 (8 Oz. Pack).
  3. Sour cream-1 tub (8 Oz.)
  4. Dole crushed Pineapple-1 ( 8 oz. can )
  5.  Pineapple  gelatin-1 (6 oz. Pack)
  6. Unsalted butter-3/4 stick
  7. Sugar-3 tbsp. plus 1/4 cup divided 
  8. Water-1/4 cup for dissolving gelatin

Method:

  • First step is to dissolve gelatin in lukewarm water, make sure it does not form lumps.
  • Slowly add Dole pineapple juice.Strain the chunks and juice by using a fine muslin cloth.
  • You can use squeezed pineapple for garnishing, as I have done in the picture. If you don't like it, just discard.
  • Put the vessel straight  in the refrigerator and start working on cracker crumbs base.
  • In a mixing bowl, mix crumbs, butter and 1/4th cup sugar and in a rectangle box,spread an even layer of it.
  • Cover the box and put it in the fridge to set.
  • Now take a large mixing bowl or stand mixer, and mix sour cream, cream cheese, 3 tbsp. sugar and gradually add pineapple gelatin into it.
  • Take out the rectangle pan from the fridge and pour the mixture on top of it.
  • Tap to even the cream cheese layer.
  • Garnish with Pineapple pieces and refrigerate for 6 hours for setting. You can divide half and half as I do,half portion with pineapple topping,other half just plain and smoothed for picture perfect shot ! But trust me, no need for that, I did it for just one piece to click a picture for this blog 😃
  • Cut squares and serve chilled.
P.S. The cream cheese and butter should be on room temperature, so take those out at least 4 hours before starting the procedure.
