Salmon is itself a delicacy. Rich in Omega3, this fish is considered very healthy for heart. And this particular dish is my family favorite.I am notorious for not clinging to only one or two methods of cooking any particular meat or fish,but this is the only dish I cooked by one method! Reason-well, my son is so fond of this that he never lets me change the recipe of salmon!

Today is a gloomy weather  here in Chicago. Cloudy, snowy  and frigid. So I decided to cheer up my family by cooking this finger licking Salmon.

Salmon

 

Ingredients:

  1. Salmon fillet-8 oz. 
  2. Onion-1 large or 2 medium size (thinly sliced)
  3. Ginger-1' grated or crushed
  4. Garlic cloves-2-3 (big size)
  5. Tamarind pulp-size of one lemon ball (soaked in warm water for alf an hour)
  6. White vinegar-1 tsp/ for soaking salmon
  7. Turmeric powder-1/2 tsp.
  8. Coriander powder-1 heaped tsp.
  9. Chilli Powder-3 tsp.(salmon is bland so lesser quantity may not impart the same delish taste!)
  10. Special roasted garam masala-1/2 tsp. (I make a special garam masala but you can use normal or Kitchen King masala also,or can skip tis completely).
  11. Olive or refined oil-2tbsp.
  12. Lime or lemon-1/2

Procedure:

  • Soak salmon in water with 1 tsp. white vinegar. This will help reducing the fishy smell.
  • Grate or crush ginger-garlic.
  • Heat a pan on medium flame and pour oil.
  • When oil is mildly heated,add tinly sliced onions.
  • Saute till these onions turn soft,do not let them turn brown.
  • Now add ginger-garlic. (You can use ginger-garlic paste too).
  • Saute till the rawness of garlic is gone,it will take approximately 1 minute.
  • Now add powdered spices,tamarind and salt.
  • Stir for a couple of minutes.
  • Add salmon,skin side up.
  • Squeeze half lemon or lime.
  • Cover and cook for 2 minutes on low to medium flame.
  • Open the lid and carefully flip salmon and scrape masala on top.
  • Cover the lid again for 3 minutes approx or till te oil starts coming on the surface.
Turn off the stove and serve with Jasmine rice. This salmon can also be served with alcoholic drinks along with dhaniya or pudina cutney. Enjoy!
