This is a very simple and tasty recipe from the eastern regions of U.P. Soya (Dill) is abundant in winters of India and here in U.S., you can find it year long. Most of the time I freeze it in small ziplock bags and use it whenever I like and it saves time in cleaning,chopping.

 Eggplant, aubergine or brinjal hails from the nightshade species of fruits and vegetables. A close relative of tomato and potato, Brinjal is popular vegetable across the world. It is full of health benefits and can be cooked into scrumptious, tasty and easy recipes. Eggplant or brinjal is of various shapes and sizes and can be green, purple, light purple and even white!

Eggplants are power-packed with niacin, magnesium, phosphorus, vitamin C, vitamin K, vitamin B6, thiamine, copper, dietary fiber, folic acid, potassium, and manganese. It is gaining popularity because as it has no cholesterol and saturated fat.

The health benefits of eggplant includes the following its ability to help build strong bones, managing diabetes, reducing stress,reduce the symptoms of anemia, maintain cardiovascular health, protect the digestive system, good for weight loss, protecting infants from birth defects, and even preventing certain type of cancer.

Soya Aalu Baingan

 Ingredients:

  1. Aalu (potato) -2 big or 3 medium
  2. Baingan (eggplant or Brinjle)  1 big or 2 medium
  3. Soya or Dill- 1 bunch
  4. Tomato-1 medium or 2 small
  5. Garlic cloves-5
  6. Green cilli-7-8
  7. Mustard oil-3  tbsp.
  8. Salt to taste. 

Procedure:

  • Cut potatoes in inch long cubes.
  • Cut eggplant in 2 inches cubes
  • Wash and clean dill properly and cut them too.
  • Chop tomato in cubes.
  • Heat mustard oil in kadai and heat till smoky. 
  • Throw in sliced garlic and when it turns pink,add green chillies.
  • Now add aalu baingan and salt and cover to cook.
  • When potatoes are tender,add dill and cover.
  • After 5 minutes check aalu baingan are cooked or not,those should be tender but not mushy.
  • Now add chopped tomato.
  • Cover for a couple of minutes.
  • Turn off the flame and serve with chapati,dal and rice.
