Saag Aalu
Saag Aalu or spinach potato is a delicious dish which can be made in a jiffy. Goes well with everything: roti, paratha, puri or chawal. It is my mom's recipe which was handed down to her by her mom!
Ingredients:
1. Spinach 1 bunch
2. Red potato or baby potatoes 2
3. Onion 1 large finely chopped
4. Ginger 1/2" piece sliced
5. Asafoetida 1 pinch
6. Red chilli powder 1/2 tsp.
7. Turmeric powder 1/2 tsp.
8. Garam masala powder 34th tsp. (I use MDH in this recipe, you can use any store bought)
9. Salt
10. Mustard oil 2 tbsp.
Method:
*Wash and chop spinach.
* Cut potatoes in halves or quarters if large.
*Heat an iron kadai,( saag tastes best when cooked in Iron kadai) and add oil.
*When oil is smokey hot, add asafoetida and finely cut onions.
*Saute till light brown, add ginger and all the spices and potatoes.
*Fry potatoes for approx 3-4 minutes and then add chopped spinach.
*Cover and cook on low medium till potatoes are soft.
*Do the bhunai or drying of remaining water on medium high flame, it will give a sondhapan to the saag aalu.
