Chole is that iconic delicacy of Punjab which is universal love of whole India.
Chicken peas or Garbanzo beans are loaded with protein and other minerals. For vegetarians,  these are major source of protein  supply.
Cooking chole is a little time taking process and in this super hot North Indian summer,  it is a torture to spend so much time in kitchen. BUT WHAT IF YOU HAVE TO SPEND JUST 5 MINUTES APPROX. IN THE KITCHEN AND DISH OUT AN EXCELLENT MEAL!
UNBELIEVABLE,  right? 
No, it's quite feasible by this method. Just throw all the ingredients in the pressure cooker and leave it on slow flame for 40 minutes,  then put the flame on slow medium and cook till 3 whistles. 
When pressure is absorbed,  make quick tadka and serve with Rice if you really want a quick meal in hot 🔥 season, otherwise go ahead and make bhature or puris!

This recipe is inspired by Anukriti cooking and I just skipped a couple of ingredients in order to suit my taste palates. 

INGREDIENTS:

1. CHOLE 250 GM. Soaked overnight 
2. Tomato puree 1/2 cup
3. Ginger 2" piece finely chopped 
4. Green chillies 3-4 finely chopped 
5. Cilantro 2 tbsp. Finely chopped 
6. Kasoori methi 2 tbsp.
7. Potatoes 2 cut in halves with skin
8. Coriander powder  1 tsp.
9. Roasted cumin powder 1 tsp.
10. Kashmiri chili powder  2 tsp.
11. Red chilli powder 1/2 tsp.
12. Garam masala powder 1/2 tsp.
13. Chaat masala 1/2 tsp.
14. Anardana or amchoor powder 1/2 tsp.
15. Amla 1whole or 1 tsp. Powder
16. Asafoetida 1 pinch
17. Chole masala 1/2 tsp.
18. Turmeric powder 1/4 tsp.
19. Salt
20. Desi ghee 3 tbsp.
21. Whole spices pounded- 2 black cardamom,  3 cloves, 1/2 stick cinnamon,  5 black pepper,  1 tsp. Cumin and 1/2 tsp. Coriander seeds 
22. Jaggery powder or sugar 1 tsp.

Method:

*Throw everything in the pressure cooker with 1 cup of water. This time 1 tbsp. Ghee and half tsp. Dry spices except Coriander powder,  rest of half spoon we will use in preparing khatte aalu fry.
*Cook on low heat as directed above then make tadka one.
*In 1 tbsp. Ghee, add 1 tbsp. Besan and fry on low flame till sondhi smell comes , add chole.
*Remove aalu now.
*Again add a lil kasoori methi here and cover and cook on Sim after adding a little more water.
* Heat 1 tbsp. ghee in a pan and add 1 tsp. Cut ginger, hing, cilantro leaves, kasoori methi and throw potatoes. 
*Also add here half tsp. each of kashmiri chili powder, chaat masala and a pinch of salt.
* Fry for a minute by adding 1 tsp. Water.

Now one final tadka of chole..

Heat 1 tbsp. Ghee and add finely chopped Ginger, when light pink, add 1 tsp. Kashmiri chili powder and immediately add into chole.

Chatpati khatte aalu can be served separately or on top of chole. You can add lemon juice also but my aalu was good enough khatta for me.

Note: So in this method, you spend only that time in your kitchen when you prepare tadka, rest of cooking is done on dum while remaining outside of the kitchen.
