Suran/Elephant foot yam/ Jimikand or Ole....by whichever name you call it, this produce is super healthy, super yummy and excellent.

Suran, or Elephant yam, is the edible bulb or corm of a very unique looking single-stalked, flowering plant.
Suran is a nutrient-dense tuber and good source of carbs. In Indonesia, Suran is the third most important source of carbohydrates after rice and corn. The tubers are rich in vitamin C, B-complex (thiamine, riboflavin and niacin), potassium and manganese. The corm also contains beta-carotene, as evidenced in its orange-hued flesh. Suran is a good source of dietary fiber and phytosterols, which are compounds that help lower bad or “LDL” cholesterol, making it heart healthy and easy to digest. Suran has a lower glycemic index than potatoes, which is ideal for diabetic diets.


In Uttar Pradesh, in northern India, where Suran is often known as Jimikand, the tuber is the main ingredient in a dish called ‘tariwale suran.’ The masala dish is served during the prayer of Laxmi Pujan, on the third day of Diwali, the Hindu festival of lights. Suran is used in traditional Ayurvedic medicine throughout India. The tuber is used for its anti-inflammatory properties, as well as digestive, aphrodisiac and rejuvenating qualities.

This vegetable might not look as appealing as asparagus or broccoli, but it packs a punch of health benefits. Don’t let costly and fancy vegetables take the limelight away from this desi healthful veggie and know just why you should adopt this in your diet! 

 Aids Digestion- Jimikand is an astringent with a pungent taste and hot digestive effect. Due to its thermal effect, it decreases mucus and wind while increasing bile and thus aiding digestion. Its consumption promotes a feeling of lightness and has the properties for improving metabolism.

Suran or Jimikand can be a little hard to cut due to its stony exterior. Thoroughly wash the yam after peeling to remove any dirt. It can be diced or sliced according to the dish you are planning to make. There are irritant properties in Jimikand, thus the prevalent practice is to first boil it in either vinegar water, lemon, alum or tamarind after cutting it. After that, you can enjoy it in different forms. 



Tariwale or rasedar suran ki sabzi is a mouth watering preparation which goes well with anything and everything!

Ingredients:


1- Suran- 1 cup (cut into medium size squares)
2- Onion-2
3-Garlic-3-4 cloves
4-Ginger-1/2" piece
5-Green chillies-3
6-Tomato-1
7-Curd-1/4 cup
8-Red chilli powder-1 tsp. or more upto your taste
9-Turmeric powder-1/2 tsp.
10-Coriander powder-1/2 tsp. if you are taking whole coriander seeds otherwise take 1 full
11-Kashmiri mirch powder-2 tsp.
12-Whole spices to be ground (2 black cardamom, 1 tsp. cumin seeds, 1 tsp. coriander seeds, 2 cloves, 1/2" piece cinnamon, 4-5  black peppers
13-Mustard oil for shallow frying suran and also for masala
14- Salt
15-Water-1/2 cup or more 
16- Methi-jeera-1/2 +1/2 tsp. for tadka or you can take sliced onion for tadka
17-Amchoor slices-5-6


Method:


*In a pan, add washed and cut suran, also add salt and 3 amchoor slices or lemon juice.
*Boil it, I did this in pressure cooker upto 1 whistle.
*Drain water and keep aside.
*Grind all the whole spices first, then also add onion-garlic-green chillies-ginger and make a paste with help of a little water.
* Heat 3tbsp. mustard oil, when smoky hot, add suran.
*Fry from both side till light brown. Remove.
*Add more oil for masala, about 1/2 cup and add tadka now.
*Then add onion-garlic-ginger green chilli masala and cut tomato, beaten curd and all the dry masala powder.
*Cover and cook on low medium flame stirring occasionally till oil comes on surface.
* Bhunai of masala is the key of delicious tari and thus do a nice bhunai on low flame.
*When masala is well cooked, add suran and water, also add amchoor slices, if you dont have slices, you may add amchoor powder 1 tsp. or lemon juice.
*Give it a nice boil so suran is well cooked in gravy.
*Garnish with coriander leaves and serve hot with rice or chapati.
