Jowar is globally known as the "New Quinoa" for its glute-free and whole grain goodness. It is also known as Sorghum.

Since it is a member of the millet family, jowar is gaining massive attention these days. It is an ancient grain whose popularity was shadowed by wheat and rice. The revival of jowar is due to the shift in people’s mindset about consuming millets. From weight loss to improved heart health, jowar has a range of health benefits.
Jowar is valued as one of the best atta for weight loss and a wholesome alternative for wheat roti. The wealth of nutrients including protein, dietary fibre, calcium, iron, phosphorus, B vitamins and C helps in regulating blood sugar levels, control appetite, promotes weight loss and boost energy levels.

The goodness of essential nutrients in jowar includes calcium, iron, phosphorus, magnesium, niacin, riboflavin, thiamin, folate and antioxidants that work well to keep the skin look healthy and glow naturally.

Jowar Masala Roti is a yummy and healthy alternative to wheat flour rotis. Ajwain and roasted cumin powder add digestion benefits, carrot, purple cabbage , coriander leaves and opo squash or lauki provide vitamin C, magnesium, vitamin A and other minerals that are good for your overall health. Green chillies impart heat and also are superfoods and onion kills several bacteria and has many health benefits. It goes best with garlic chutney or any seasonal pickle of winter.


Ingredients:

1- Jowar aata-2 cups
2- Wheat aata-1/2 cup
3- Onion- 1 small ( finely chopped)
4- Carrot-1/2 (grated)
5-Lauki- Half (grated)
6- Purple cabbage-2 leaves (finely chopped Optional)
7- Coriander leaves- 2 tsp. finely chopped
8- Green chillies-4-6 (Finely chopped)
9- Ajwain-1 tsp.
10- Roasted cumin powder-1 tsp.
11- Salt
12- Oil





Method:

* Mix aal the ingredients except oil and knead a tight dough with the help of hot water.
* Let it rest for 10 minutes covered properly.
* Heat tawa or griddle, cut an aluminum foil smaller than tawa size, grease it and make roti by taking a ball and rolling out with your palm with the help of water. I did this way, if you are good in making rotis by hand, go ahead.
* Make a whole in the center by your index finger, flip this on tawa by roti side down, cover with a lid.
* After about 3 minutes, slowly and carefully remove the aluminum foil and smear roti with oil, putting half spoon oil in the hole also.
* Flip it over and apply oil and with the help of a spatula, press and cook till  you spot nice spots on its face, it is done.
* Serve with pickle, onion and sabzi, I served it with Amla pickle which has a lot of minced garlic and green chillies too and Vinegar soaked orange onion.
*Enjoy the nutritious and filling meal, you can serve it as breakfast or lunch.
