Rustic Style Mutton 




This is a very own creation of mine. Named it rustic because I tried to cook it with minimal spices and less fuss. Turned out awesome. 

1-Mutton 4 big pieces (I took boneless)
2-Onion 1 large
3-Garlic 5 cloves,3 peeled
4- Green chillies  6-7 slit
5-Roasted coriander 1 tsp.
6-Roasted cumin 1 tsp.
7-Black cardamom and 1/2 stick cinnamon roasted
8-Curd 2tbsp.
9-Red chili powder 1/2 tsp.
10-Meat masala 1 tsp.
11-Coriander powder 1 tsp.
12-Turmeric powder
13-Hing 1 pinch
14-Salt
15-Mustard oil 3 tbsp.
16-Desi ghee 1 tsp.
17-Water 


I chopped half onion,3 garlic cloves and 5 green chillies in manual chopper.
Roasted all whole spices separately and then coarsely grounded those.
Chopped half of the half onion for tadaka and thickly cut rest of half.
Heated mustard oil and added tadka onions. 
When slightly brown,added mutton pieces and red chili powder. 
Seared it on high flame for 2-3 minutes.
Then added onion garlic green chili and salt and powdered masalas except roasted whole spices which we coarsely grounded. 
Cooked till one whistle of the pressure cooker.
Again, after a while, opened the lid and started bhunoing masala,here I added unpeeled 2 garlic cloves and thick cut onion.
After 5 minutes,  added coarsely grounded masala,curd and 3 slit green chilis. 
When oil starts coming on the surface, added ghee and then water for the gravy.
Turned off heat after 1 minute. 


Served with rice.
