      Roasted Green and Yellow Zucchini Tricolor Pasta Salad


 
It is Friday today and hubby dear told me that he would be back for lunch. As he prefers to have light meal at lunch time, I was thinking of fixing grilled Zucchini for him. He just loves Char-grilled veggies and can be hungry even after having his meal if the smoky smell of such veggies enter into his nostrils!

So, I had these green and yellow Zucchini in the refrigerator and it was almost decided that I would grill these for him. but then I thought that it would be not filling enough as there would be no soup with it. So thought to prepare grilled pasta salad. I had this nice tricolor pasta in the pantry, I grabbed it and quickly fixed this one pan/pot yummy meal. 


 Ingredients:

  1. Tricolor Rotini-1/2 cup (You can take regular also, cook it according to the package direction.)
  2. Zucchini-1 green and 1 yellow (Medium half moon slices)
  3. Onion-1/2 finely chopped
  4. Garlic cloves-2 fat or 5-6 normal (chopped finely)
  5. Tomatoes-2 (Thickly sliced)
  6. Salt
  7. Oil-1 tbsp.
  8. Italian seasoning-2 tsp.
  9. Oregano-1 tsp.
  10. Jalapeno pepper-1/2
  11. Carrot-3 baby or half regular
  12. Crushed chili powder-1 tsp.
  13. Black pepper powder-1 1/2 tsp.
  14. Sugar-2 tsp.
  15. Avocado, lettuce, lime and parsley for garnish

Procedure:

  • Heat oil in a skillet and throw chopped garlic.
    • Saute till pink, add finely chopped onion.
    • Saute till soft, now add chopped Zucchini and Carrots.
    • On highest flame, grill them adding all the spices.
    • Add salt in the last.
    • When a nice brown color is spotted on them, add sliced tomatoes.
    • Cook till they turn mushy and tender.
    • Now add cooked pasta and mix them well.
    • Serve hot with lettuce and other garnishing items.
