                             Hari Mirchi ka Instant Pickle

 A very quick, handy and tasty condiment for all of your desi meals! This green chilli pickle is a must try, you can store it in your refrigerator for long, though it doesn't last long for sure! Enhances the taste of any meal, a must for puris, parathas and Tehri, this instant pickle is tasty and a time saver.

Ingredients:

  1. Green chillies-250 gm.
  2. Kalonji Masala-5 tbsp. (*Recipe below*)
  3. Turmeric powder-1 tsp.
  4. Amchur powder-7-8 heaped tsp.
  5. Salt
  6. Mustard or vegetable oil-4tbsp.

 

Procedure:

  • Wash and dry the chillies and cut into halves. 
  • Heat oil in a wok or pan and add the cut chillies.
  • Also add salt and all the spices at this time. 
  • Cover and cook at low heat till chillies are tender.
  • If you see that masala is very dry and burning, just add a couple of tsps. of vegetable oil.
  • When done, turn off the heat and don't cover as it will become wet because of steam.
  • Store in a glass or ceramic container when it completely cools down. 


Note *
Kalonji masala 


  1. Coriander seeds-1 cup
  2. Fennel seeds or moti saunf-1/2 cup
  3. Nigella seeds or Kalonji-1/4 cup
  4. Fenugreek seeds or Methi dana-1 tbsp.                                                                                              We will roast these spices, but the order of roasting is very important here. On a heated tawa, first put coriander, after 2 minutes, add fenugreek seeds to this, keep roasting on slow flame, after about 3 minutes, add fennel seeds and roast for about one minute or when a nice aroma starts coming out. Add Kalonji and instantly turn off the flame. Let these remain on tawa till they cool down. Now grind them and store them in an airtight jar. Use this for making stuffed vegetables.
