Ganga -Gomti is the title of my blog because my cooking is the reflection of the cuisine of eastern Uttar-Pradesh.My mom's journey from Ballia to Lucknow is reflected in her cooking and Ballia is a small city situated on the banks of holy river Ganga while Lucknow is the capital city of U.P. situated on the banks of river Gomti.Now I live in Chicago which is on the banks of mighty Lake Michigan,still the influence of Ganga-Gomti cuisine is predominant in my cooking even today!

Red Bell Pepper & Onion Quesadilla
In our household, vegetarian quesadillas are much frequented Mexican dishes. My son wants to have them for breakfast whenever he visits us from New York.This is the only vegetarian dish he would eat when he visits home! Usually I make Black beans & Rice quesadillas but that is a little time consuming dish,I will definitely share the recipe sometime. This one is quick and you can replace red bell pepper with Mushroom and that also tastes awesome.
Ingredients:
Flour tortillas-4 (1 tortilla will be good enough for 3 triangle pieces)
Red bell pepper -1 large
Red onion-1 large
salt
black pepper crushed or powder-1 tsp.
Mexican cheese-1/2 cup grated
Oil-1tsp.
Butter
Procedure:
Heat wok and add oil in it.
On a high flame , saute lengthwise cut bell pepper and onion.
Add salt and pepper.
Take a girdle or tawa and grill buttered tortillas with bell pepper stuffing adding cheese and giving it half moon shape.
