Mutton light curry (daily curry)

Mutton daily Curry 






Strange name,huh? Yes, but could not think of any other way to name this super delicious Mutton preparation described by hubby dear!

He wanted his Mutton gravy by a certain unexplained method which was in his thoughts 🤔,  but how I was supposed to know! Some vague idea, some non specific taste, and as it was the first day of 2022, being a Saturday and snow storm day here in Chicago, he was in no mood to venture out! He decided to cook himself to attain that vague taste for which he was in lookout 👀. 
Well, that was great! I sat relaxed and made my vegetarian meal. But, he ,as always, felt lazy when it was time to cook! He requested me to make a simple Mutton in thin gravy, no fancy ingredients,  just by using essential spices. 
Then I prepared a very simple day to day curry and to my surprise,  he gave me 10 * for this preparation! As both my MA in law and Nani in law were marvelous cook, his standards are very high and this was a great compliment.

Ingredients:
1-Mutton pieces-3boneless,3 bone in(I used only 3 as he doesn't eat more)
2-Onions-3, 1thinly sliced
Garlic cloves-3
3-Ginger-1/2"piece
4-Curd-2 tsp.
5-Red chili powder-1 tsp.
6-kashmiri chili powder-1 tsp.
7-Coriander powder-1 and 1/2 tsp.
8-Meat masala powder-1 tsp.
9-Asafoetida-a pinch
10- Cumin-1 tsp.
11-Black cumin-1/2 tsp.
12-Salt
13-Dalda or refined-1 tbsp.
14-Mustard oil-3 tbsp.
15-Desi ghee-1 tsp.
16-Turmeric powder-1/4 tsp.
17-Whole spices(bay leaf 1, black cardamom 1, cinnamon 1/2"piece, green cardamom 2, cloves 3 .
18-Green chillies-3
Water- 1/2 cup approx.
19-Coriander sprig-3

Procedure:

  • Process 2 onions,garlic and ginger, I did it in a chopper. Save 3 matchsticks ginger for later.
  • Heat dalda/refined and mustard oil in a pressure cooker. 
  • Add bay leaf and quickly remove from oil,discard it.
  • Now add whole spices and asafoetida and stir for a moment.
  • Add one onion thinly sliced and saute till light brown, put the flame on high and add mutton pieces.
  • Sear them on high flame for 3-4 minutes or till some spots develop.
  • Now add onion,garlic,ginger, 2 slit green peppers, chopped coriander, Coriander powder and turmeric powder.
  • Stir and close the lid and cook till one whistle. (Here in U.S., Mutton cooks fast so we don't cook it much, you cook according to your Mutton quality).
  • Soak red chili powder in quarter cup water.
  • After the whistle, de pressurize the cooker and then open the lid.
  • Turn on the heat again and add soaked red chili powder and kashmiri mirch, you can soak them together as I did.
  • Keep the flame low and bhuno.
  • After 5 minutes, add smooth curd and meat masala.
  • Also add salt.
  • Keep bhunoing on low flame.
  • Add desi ghee and keep bhunoing 
  • When oil starts separating, turn the heat on lowest setting and keep bhunoing.
  • When no bubble remains and oil is on the surface, add water remaining slit green pepper and ginger matchsticks.
  • Close the lid and cook till one whistle. 
  • Serve with chapati or rice.
  • Enjoy!
