Mexican Rice


Mexican Rice is a delicious dish and many Indians can associate it with their very own veg pulao or tehri, Procedure is of course different. 
They use chicken,beef or vegetable broth and some chicken or tomato seasoning while cooking it.
But, we can cook this without any such ingredients and still it tastes yummy 😋.  Here is my recipe....

INGREDIENTS:

  1. Long grain or Mexican rice-1 cup
  2. Ranchero Sauce or tomato 🍅 sauce(puree in India)  1 cup
  3. Salt
  4. Black pepper powder-1/2 tsp.
  5. Kashmiri chili powder-1 tsp.
  6. Onion finely chopped-1 medium
  7. Sweet corn-1/2 cup
  8. Green peas-1/2 cup
  9. Bell pepper-1/2 cut in fine squares 
  10. Celary-finely chopped (optional)
  11. If not using Ranchero Sauce, basil dry 1 tsp. Oregano 1/2 tsp. And Persely dry 1 tsp. Plus red chilli powder 1/2 tsp.


METHOD:

  • Heat 2 tbsp. Oil in a thick bottomed pot and add chopped onion.
  • Saute till soft and slightly pink, now add chopped veggies and salt and pepper. If not using Ranchero Sauce, then add all the spices mentioned above. 
  • When veggies are soft,add Sauce and stir for about half a minute.
  • Now add rice and saute.
  • Add water I measure by taking same amount of water plus Sauce as rice, and pressure cook it till one whistle. 
  • Serve with any Mexican food or enjoy as such .
