Indo Mexican Kabobs
India's connection with Mexico is not decades or centuries old, we can trace this connection thousands of years ago during Ramayan and Mahabharat period! Modern Mexico was that time known as Maya civilization, it is well known that Ravan's father in law was Maya, and he built sone ki Lanka.
In Mahabharat Era, Pandava's capital city Indraprasth's palace was also built by Mayan architect, and we all know how marvelous it was as it is mentioned in our epic.It was the same Palace where Duryodhan had illusion of water pool though the surface was plane! Where Draupadi ridiculously laughed at him and in a way seeds of Mahabharat war were sown then and there.
Now,today's recipe..this black beans and rice stuffing I made for quesadila. Had enough of quesadila, so didn't make more. Leftover stuffing was lying in the fridge. Thought to give it a makeover, added finely chopped onions, green chillies and garam masala powder, a pinch of salt and shallow fried it. Served with a dollop of sour cream, Coriander chutney and onion rings and lime slices. Tasted awesome.
