    Aalu ka Garlicky Paratha



Who doesn't like aalu ka paratha? It is that universal favorite of Indian cuisine which needs no introduction at all!

Aalu ka paratha stuffing is made by various methods.Every household has its own unique recipe and even more than one method of making the stuffing.  Such is the case here with me. This kind of stuffing Mom used to make during winter,  when fresh garlic leaves and coriander leaves were available in abundance. Remember, those were the times when coriander leaves were only available  during winter season.




Ingredients:

1. Boiled and mashed potato-3-4
2. Garlic cloves-5
3. Garlic leaves(optional)
4. Green chillies-4-6
5. Coriander leaves-7-8 sprigs
6. Salt
7. Dough for parathas
8. Oil for paratha 

Method:

1- coarsely mince all the ingredients from number 2 to number 5.
2-Add salt and mix in mashed potato. 
3- Divide the stuffing in equal size balls and make parathas.
4- Serve with dhania chutney or pickle.

I served with dhania chutney, Cranberry Relish, lauki ka raita and Methi ke Laddu.

Note:
As I was out of fresh coriander leaves,  I just skipped that.
