Sama or samvat  is also commonly called as vrat ke chawal. since during fasting we abstain from cereal grains and to make any rice based dishes we use samvat or sama grains instead of rice.These are not a kind of rice variety or even associated with rice. Basically they are from the millet family. The english name for Sama ke chawal is Barnyard millet

 This millet is frequently used during religious fasting days in India.  They are somewhat like mini versions of saboodana look wise.

 Barnyard millet has the lowest carbohydrate content and energy value amongst all the varieties of Millets. The bran layers of millets are good sources of B-complex vitamins.Barnyard millet is an appropriate food for patients intolerant to gluten causing celiac disease.

 The kheer is really delish and light on stomach. 


Ingredients:

  1. Sama ka Chawal or Barnyard Millet-1/4 cup
  2. Poppyseeds-1/4 cup (optional)
  3. Milk- 5 cups
  4. Condensed Milk-1/2 cup
  5. Nuts for garnishing
  6. Green cardamom powder-1 tsp.
  7. Ghee-1 tsp. heaped 

Procedure:

  1. In a pot, add 1 tsp. ghee and saute poppyseeds and rinsed sama rice.
  2. After a minute, add milk and cook on low flame till milk thickens and rice is cooked, it will take 30-35 minutes approx.
  3. Now add green cardamom powder and condensed milk and continue cooking on low flame for 5 -10 minutes more.
  4. Turn off the flame and transfer in individual bowls and garnish.
  5. Serve chilled.
Note: The sago pomegranate Is made by washing 1 tbsp. sago or sabudana 4-5 times and then cooking in 1/4 cup water and 1/2 cup beetroot juice till translucent. After that I added 1 tsp. sugar and 1/4 tsp. green cardamom powder and then poured on individual bowls for garnishing.
