 Suran/Jimikand or Elephant foot yam kababs are so delicious that one wants to eat these repeatedly. Suran is a must for Diwali menu, everyone cooks it and each and every method is yummy, sometimes small size suran causes itching in throat, but large size suran or the frozen suran that we get here is just perfect and very tasty.

This dish I learnt from my Mother-in-Law, she used to prepare this on Diwali.


Suran, Jimikand or elephant foot yam is a tuber plant. It is cultivated across India as a cash crop and used commonly as a vegetable. 

 This vegetable might not look as appealing as asparagus or broccoli, but it packs a punch of health benefits. Don’t let costly and fancy vegetables take the limelight away from this desi healthful veggie and know just why you should adopt this in your diet! 

 Aids Digestion- Jimikand is an astringent with a pungent taste and hot digestive effect. Due to its thermal effect, it decreases mucus and wind while increasing bile and thus aiding digestion. Its consumption promotes a feeling of lightness and has the properties for improving metabolism.



Good for Skin- Suran or Jimikand contains ‘Isoflavones’, which can fight numerous skin problems such as pigmentation, sagging and roughness of skin while making it tighter. Long term consumption can help make your skin smooth and soft.
Promotes Weight Loss
- Jimikand or elephant foot yam is full of good gut bacteria and can help rebuild the digestion process. Hence, people experiencing weight problems due to bloating, gastric issues and irritable bowel syndrome (IBS) can benefit from eating this veggie. 

Protects From Diseases- The vitamins, minerals and phytonutrients can help improve many existing health issues. For example, people suffering from obesity, heart diseases, diabetes and cancer must include this wonder veggie in their diet to heal from their ailments.

Boosts Hormones- Jimikand is a great veggie for both girls and boys while they are still growing as it can promote and regulate hormones effectively. This allows them to grow stronger, taller and leaner.  


Suran or Jimikand can be a little hard to cut due to its stony exterior. Thoroughly wash the yam after peeling to remove any dirt. It can be diced or sliced according to the dish you are planning to make. There are irritant properties in Jimikand, thus the prevalent practice is to first boil it in either vinegar water, lemon, alum or tamarind after cutting it. After that, you can enjoy it in different forms. 

  Suran is a popular ingredient in Sri Lanka and in India, where it is used in curries and koftas in the northern part of the country. 

Ingredients: 

  1. Suran -250 gm. (I used 1 frozen pack)
    1. Amchoor powder-5-6 tsp.
    2. Salt
    3. Red chili powder-4 tsp.
    4. Onion-1 medium (Finely chopped)
    5. Green chilies-3-5 (Finely chopped)
    6. Ginger-1/2" piece (Finely chopped)
    7. Chana dal soaked-1/4 cup
    8. Black cardamom-1
    9. Cloves-2
    10. Black pepper-4-5 (8.9.10. number items should be ground)
    11. oil for shallow frying

     Procedure:

    • First boil the elephant foot yam or suran with soaked chana dal and amchoor powder, salt and red chili powder with enough water to soak it,approx. 1 cup.
    • Let it cook in pressure cooker until it whistles 4-5 times on medium slow heat.
    • When it is de pressurized, open the lid and mash it properly.
    • In about 2 tsp. oil, saute onion,ginger and green chillies till light pink, add it to suran.
    • Also add ground spices.
    • Form flat balls and shallow fry it on tawa.
    • Serve with onion. lemon and if you like, with chutney too.
