      Sawan Shivratri Thali 






Sawan Shivratri is a very auspicious occasion for devout Hindus. They observe fast and celebrate the divine presence and protection of Lord Mahadev.

To mark this divine night, here is my humble and simple food. These dishes are sans onion-garlic and delicious. 

Matar kachori

Ingredients:

1। Frozen green peas- 1 and half cup
2- Desi ghee-1 tbsp.
3. Wheat flour-1 cup
4. All purpose flour-1 cup
5. Salt
6. Kalonji-1 tsp.
7. SPICES to  grind (fennel seeds 1 tbsp., black peppercorns 6, black cardamom 1, cloves 2)
8. Grated ginger-1 tsp.
9. Asafoetida- half tsp.
10. Red chilli powder-2 tsp.
11. Oil for moyan-3 tbsp.
12. Oil for frying kachori 

Method:

* Defrost the frozen peas and coarsely grind them.
* Heat a non stick pan, add Desi ghee. 
* Add grated ginger and Asafoetida,  also add ground peas.
* Add salt and red chilli powder,  also add ground masala and cook on medium low till moisture is gone.
* Cool

* Knead a dough of aata and maida with moyan oil and Kalonji and 1 tsp. Salt.
* Dough should not be hard.
* Let it rest.

* Make balls of pea stuffing and also make large balls of the dough.
* Stuff and roll out thick.
* Heat oil in a kadai, and fry kachori on slow flame till they look like balloons and develop a nice color. 




Dum Aalu


I made this with petite potatoes,  you can make with baby potatoes too.

Blend tomatoes,  curd, coriander leaves,  ginger together. 

Heat 2 tbsp. Oil in a pressure cooker, add bay leaf, hing and shahi jeera,  you can use cumin seeds if you like.

Add blended masala, turmeric powder,  coriander powder and red chilli powder according to taste.

Also add kashmiri chilli powder, salt and bhuno on slow flame till oil is separated. 

Add potatoes (I did not peel the potatoes,  just pricked them randomly so that masala goes inside), add garam masala, kasoori methi and water and pressure cook till done.


Sama ke chawal ki Kheer 


Ingredients:

Sama ka Chawal or Barnyard Millet-1/4 cup
Poppyseeds-1/4 cup (optional)
Milk- 5 cups
Condensed Milk-1/2 cup
Nuts for garnishing
Green cardamom powder-1 tsp.
Ghee-1 tsp. heaped 


Procedure:

In a pot, add 1 tsp. ghee and saute poppyseeds and rinsed sama rice.
After a minute, add milk and cook on low flame till milk thickens and rice is cooked, it will take 30-35 minutes approx.
Now add green cardamom powder and condensed milk and continue cooking on low flame for 5 -10 minutes more.
Turn off the flame and transfer in individual bowls and garnish.
Serve chilled.
