Dehati or Village Style Chicken
Ingredients
1. Boneless skinless chicken 3 cut pieces
2. Onion 2 medium
3. Garlic 2 minced and 3 whole with skin
4. Curd 1 tsp. For marination
5. 1 whole black cardamom, 2 cloves, 1/2" cinnamon stick, 4-5 black pepper, 1 bayleaf, 1 whole red pepper, whole coriander 1/2 tsp.
6. Meat masala 1 tsp.
7. Garam masala 1/2 tsp.
8. Red chilli powder 1 tsp. Soaked in water
9. Turmeric powder
10. Coriander powder 1 tsp.
11. Salt
12. Cilantro tbsp chopped
13. Mustard oil 3 tbsp.
14. Desi ghee 1 tsp.
15. Kashmiri chilli powder 1 tsp.
16. Green cardamom powder 1 pinch
17. Le.on juice 1/2 tsp.
Method
Wash and marinate chicken in curd,minced garlic and salt.
Heat oil in a pressure cooker and add all the whole spices.
Now add thinly sliced onion ( keep half thickly sliced apart) plus chopped cilantro and saute till slightly brown.
Put the flame on high and add marinated chicken.
Seer till brown spots on the chicken.
Add salt, thickly cut onions, coriander powder and turmeric powder.
Cover the lid and cook on low medium flame till one whistle.
Depressurize the cooker and now add whole garlic, soaked chilli powder, kashmiri chilli powder and meat masala.
Cook on medium flame till oil starts floating on the top.
Add garam masala and green cardamom powder and ghee.
Bhuno for a min and add water for gravy, my husband wanted thin gravy this time.
When water boils, turn off the heat and garnish with cilantro.
