People crazy about Pizza,  burger or Momos will never understand the value of kachori! Kachori is still devoured with gusto in ancient cities of U.P like Varanasi, Agra, Prayagraj, Mathura and many more. The crisp outer cover and spicy and aromatic stuffed inner portion is a dish to die for!

Kachori is fried on low heat to get that crisp crust and thus is definitely time taking, but once in a while worth trying. I made this kachori today with 100% whole wheat flour, you can do 50/50 with aata/maida. 

Ingredients:

1. Aata 2 cups
2. Refined oil 3 tbsp. For moyen
3. Salt 1 tsp. ( for dough)
4. Ajwain crushed 1 tsp.
5. Kalonji optional 1/2 tsp.
6. (Coriander seeds 1 tsp, black cardamom 1, cloves 2, fennel seeds 1 tsp, black pepper 5) ground coarsely
7. Red chilli powder 1 tbsp.
8. Roasted cumin powder 1 tsp.
9. Ginger grated 1 tsp.
10. Asafoetida 1/2 tsp.
11. Salt
12. Green chillies-4-6
13. A.choor powder 2 tsp. Or more
14. Oil for frying 
15. Boiled potato 3 medium sized
16. Black salt 1 tsp.
17. Besan 2 tsp.

Method:

*Boil and cool potatoes. 
* Make a dough with moyen, salt, ajwain, dough should be soft otherwise it will Crack in oil while frying and stuffing may come out.
* Rest the dough for half an hour, meanwhile let's make stuffing.
* Grate potatoes and add salt.
* Heat 2 tbsp. Oil in a pan and add 1 tsp. Cumin and asafoetida. 
*Now add crushed spices and all the powdered spices. 
*Quickly add besan and roast on slowest settings. 
* Add grated ginger and chopped green chillies. 
*Add mashed potato and stir and cook for 5 minutes. 
* Cool down. Add coriander leaves 🍃 if you want.
* Make lime size balls of potato stuffing and also make lemon size or bigger than stuffing balls out of dough.
* Stuff and seal each ball and flatten with the help of your hands.
* Heat oil in a kadai on slow flame and when oil is mildly heated, add flattened discs.
* Gradually these will swell like balloons and fry them till golden on both sides.
     Serve "phool ke kuppa hui kachoris with tamarind chutney and your choice of vegetables.
