Ganga -Gomti is the title of my blog because my cooking is the reflection of the cuisine of eastern Uttar-Pradesh.My mom's journey from Ballia to Lucknow is reflected in her cooking and Ballia is a small city situated on the banks of holy river Ganga while Lucknow is the capital city of U.P. situated on the banks of river Gomti.Now I live in Chicago which is on the banks of mighty Lake Michigan,still the influence of Ganga-Gomti cuisine is predominant in my cooking even today!

Aalu tikki chaat
Aalu tikki is a very popular street food prepared in different ways in various regions. Each household has its own recipe. Here, I'm sharing my Mom's recipe which is a copy of U.P.'s street style Chaat. Crust is so crispy and the tangy chutney and sweetened curd drizzled over it gives it a finger licking finish! Prepared in desi ghee, it was my mom's specialty and now it is mine.
Ingredients:
Boiled and mashed potatoes-4
Arrowroot or cornstarch-3 tsp.
Salt
Tamarind dates chutney
Sweetened curd
Roasted cumin powder
Red chili powder
Method:
Mix mashed potatoes, corn starch and salt and form round discs.
Heat ghee in a girdle and crisply shallow fry the tikkis.
Garnish with rest of the ingredients and serve hot.
