SUKHE BAINGAN-AALU (EGGPLANT/BRINJLE-POTATO)






This is a very simple day-to-day subzi with a unique taste,at our house,it's everyone's favorite subzi for puris.Goes good with paratha too.This is my mom-in-law's recipe.


Eggplant, aubergine or brinjal hails from the nightshade species of fruits and vegetables. A close relative of tomato and potato, Brinjal is popular vegetable across the world. It is full of health benefits and can be cooked into scrumptious, tasty and easy recipes. Eggplant or brinjal is of various shapes and sizes and can be green, purple, light purple and even white!

Eggplants are power-packed with niacin, magnesium, phosphorus, vitamin C, vitamin K, vitamin B6, thiamine, copper, dietary fiber, folic acid, potassium, and manganese. It is gaining popularity because as it has no cholesterol and saturated fat.

The health benefits of eggplant includes the following its ability to help build strong bones, managing diabetes, reducing stress,reduce the symptoms of anemia, maintain cardiovascular health, protect the digestive system, good for weight loss, protecting infants from birth defects, and even preventing certain type of cancer.

Eggplant is good for weight loss:
Saponin present in eggplant helps in preventing fat accumulation in the body. This low calorie vegetable is perfect for those who are trying to lose weight.

Ingredients:
  1. 5-6 potatoes
  2. 1 eggplant/brinjle or chinese eggplant 3
  3. 2 cloves garlic
  4. 3-4 green peppers
  5. 3-4 dry red peppers
  6. 1 pinch hing
  7. 1/2" ginger
  8. 1/4 tsp. methidana/fenugreek seeds
  9. 1 service spoon oil
  10. salt to taste.
Method:



  1. Cut potatoes and eggplant.
  2. Finely chop garlic,green pepper & ginger.
  3. Break dry red pepper.
  4. Heat oil in a pan and sprinkle fenugreek seeds & hing.
  5. When the seeds turn brown,add chopped garlic and broken red chilli/pepper.
  6. when garlic starts being pinkish,add green pepper & ginger.
  7. Now add potato-eggplant and sprinkle salt.
  8. Cover and cook till it's done and both potato & eggplant are crisp.
  9. Enjoy with puris or parathas.
