  Basic Gravy or Master Gravy 



If you have this Master Gravy prepared in your fridge, any special sabzi like matar paneer, makkhani paneer, aalu kofta, Malai kofta, mixed veg and so many special curries can be made in a jiffy. It gives a thick texture to the Gravy without using any cashew nuts or cream. Carrots provide a desired thickness to the Gravy without any use of nuts and taste awesome.

Ingredients:

1. Tomatoes-6 (cut into halves)
2. Carrot 🥕-1 (chopped)
3. Cilantro stems-1/2 cup
4. Onions-5(Cut roughly)
5. Turmeric powder-1 tsp 
6. Red chilli 🌶 powder-2 tsp.
7. Coriander powder-2 tbsp.
8. Salt
9. Oil for shallow frying masala( 5tbsp. ) approx


* In a pressure cooker, put all the ingredients and add 1 cup of water.
* Cover the lid and cook till 4 whistles. 
* Depressurize and open, cool and blend in a mixing jar.
( I use hand mixer, so in the cooker, I heat oil, add bay leaf, remove the leaf after a few seconds and then add Cilantro stems, stir and add all the ingredients plus water, cook till 4 whistles and when steam is absorbed,  blend hot with hand mixer.)
* If you are blending in mixer, do this process and heat oil in a deep pot, add bay leaves and blended masala.
* Cook on low medium heat till oil is separated. 
* Cool and store. 
* I freeze this and then store in a ziplock bag in freezer for more storage. 


Now your master gravy is ready, when you intend to use ,give a desired tadka of onion or cumin seeds, add frozen masala, ginger , garam masala or kitchen king masala,bhuno and add desired amount of water, salt for veggies and kasoori methi. Enjoy!

*Note: Carrots provide a little natural sweetness to the gravy, so you don't need to add sugar.
