Methi mathri halwai style

       Methi Mathari



Mathari is one of the most loved finger snack of Northern India. People used to carry these along with them in long journeys. Still if you are laborious and traveling with kids in train, you would probably prefer to carry some handy snacks with you and mathari will be definitely one of those!

I remember that my mom used to prepare different types of mathri for evening  as Papa would like to have them with tea after returning from court. Court timings were 10-4 those days and as my Papa didn't take lunchbox with him, a filling tea time snack was a must for him.

Namkeen puri, sevda, namakpara, samosa, mathri, bread roll, tikki chat, sohal and sometimes kachori chutney were the items mom used to prepare in rotation for him. As a kid, I only liked samosa and tikki chaat at that time!

Festival Holi is a time when in the day time, you are busy playing colors with friends and family and thus need dry stuff to munch as you go. So, the tradition of making those items that are delicious and long lasting came into practice. In my childhood,  huge canisters of such items along with chips, papad were used to be made and distributed among household helps, postman, sweepers, peons and anybody and everybody who used to visit during this week. Preparations would start weeks before the festival. 

Coming back to mathari, this mathari I tried to make halwai style. No pricking required here and tasted amazing with tea as well.

Ingredients:


2. Cup Maida
1  small tsp. Salt
Kasoori methi 1/4 cup
Oil for moyan
1/2 tsp. Baking powder 
Oil for frying 

(Black pepper powder, black salt, normal salt and roasted cumin powder)

Method:


Make Hard dough with ingredients not in bracket.

Make small balls and press in the center with your palm, fry on low flame, then medium and towards the end, turn the flame high otherwise mathri will soak more oil.

Remove and immediately sprinkle spice powders mix mentioned in the bracket. Enjoy!
