Gatte ki Sabzi
Back in the day, leafy and green vegetables was not easily available in Rajasthan, but people used to compensate with lots of grains, pulses and spices. So they made the best out of the available resources and came up with Gatte ki sabzi.
For the uninitiated, Gatte Ki Sabzi refers to a supremely delicious curry from the Indian state of Rajasthan. Gram flour is mixed with a few spices, shaped into dumplings and cooked, then served with a delightful curd-based gravy. The tangy, spicy gravy is just the perfect complement for the soft, soft dumplings (gatte). Together, they make a wonderful accompaniment to parathas, rotis and the likes.
Ingredients:
1. Besan-1 cup
2. Ajwain 1tsp.
3. Turmeric powder-1 tsp.
4. Red chilli powder-1 tsp + 3/4 tsp.
5. Cumin powder-1/2 tsp.
6. Salt
7. Onion-1 large (Thinly sliced)
8. Tomato- half(pulp only)
9. Curd-1/4 cup
10. Oil- 2 tbsp.
11. Asafoetida-pinch
12. Coriander powder-1 tsp.
13. Garam masala powder-1/2 tsp.
Method:
* Make a dough of besan with salt,ajwain, Cumin powder, 1 tsp. Chilli powder and Asafoetida.
* Grease your palms with a little oil, and then shape logs out of the dough, about 4 inches long and 1 inch thick. Keep these logs ready.
* Boil water in a pot and add logs of besan dough into it.
* Cover and cook for about 9 minutes.
*Cut in roundels when cool.
* Heat oil in the same pot and add sliced onions.
* When light brown, add tomato pulp, coriander powder, red chilli and turmeric powder, garam masala powder and beaten curd.
*Also add salt for the gravy and bhuno this till oil is separated.
* Add besan discs and water for gravy and cook till one boil.
Serve with roti.
I served it with Rajasthani Khoba Roti and Gajar ka Halwa.
