 Kadhi—a spiced chickpea and buttermilk curry—is the quintessential comfort food, especially in northern India. Be it the thick, creamy Punjabi kadhi with its signature pyaaz ke pakode (onion fritters), spicy Rajasthani kadhi or the thin, pale and distinctly sweet Gujarati kadhi—the dish has myriad avatars. A very light dish for stomach which is doubly good in taste, kadhi is that dish one should often cook.

The pakoda I made today were Pyaz ke pakode. Long back, I had these in an Odisha girl's party, her theme was Punjabi food and she made pakoda kadhi, dal makkhani, tandoori roti and chicken. She made this kadhi and I liked it, so whenever I have cravings, I made kadhi and this variety also makes room in my kitchen, pyaz ke pakode dunked in kadhi...yum
