Thai Red Curry – everything we know and love about Thai food! Big, bold Thai flavours, beautifully fragrant, the creamy red curry sauce is so good you can put anything in it and it will be amazing!
This time I did not make it from scratch, but one trick turned it into freshly made. In 1 tsp. oil, I sauted freshly grated ginger garlic,added Red Thai curry paste, then added sliced ginger and baby corn, bamboo shoot, carrots, green and red bell pepper. A little freshly made coconut milk and some red chilli powder and green chilli paste balanced the sweetness of store bought paste. Served with Thai Basil Fried Rice.
