Ganga -Gomti is the title of my blog because my cooking is the reflection of the cuisine of eastern Uttar-Pradesh.My mom's journey from Ballia to Lucknow is reflected in her cooking and Ballia is a small city situated on the banks of holy river Ganga while Lucknow is the capital city of U.P. situated on the banks of river Gomti.Now I live in Chicago which is on the banks of mighty Lake Michigan,still the influence of Ganga-Gomti cuisine is predominant in my cooking even today!

Tehri
Tehri
Tehri is a special rice dish of U.P. When you are in hurry and still want to eat something very tasty, you go for Tehri. It is a one pot meal which is usually enjoyed with raita,pickle and rustic garden salad. It can be a quick meal for a tired week night or a light lunch for weekends. Tehri is made in various ways, I myself make two or three kinds of tehri. This one takes minimum effort and maximum result, so let's start.
Ingredients:
Basmati Rice-2 cups
Water-2 cups
Potato-1
Nutri nuggets- 1/2 cup
Green peas-1/2-1/3 cup
Vegetable oil-About 5 tbsp.
Onion-2 large or 3 medium
Bay leaf-1
Black cardamom-2
Green cardamom-4-5
Black pepper-7-8
Cloves-2
Mace-less than 1/4 blade
Cinnamon-1/2" stick
Red chilli powder-2 tsp. or according to taste
Turmeric powder-1 tsp.
Coriander powder-1 heaped tsp.
Method:
Soak rice in water for half an hour after rinsing.
Soak nutri nuggets too.
Thickly cut potato.
Finely chop onions.
In a pressure cooker, heat oil and when heated,add bay leaf,all the whole spices except green cardamom and black pepper.
Immediately add onion and sate till the onion turn light pink.
Now add black peppers and green cardamoms.
Add about 3-4tsp. of water and then coriander,chilli and turmeric powder.
Also add salt.
Now add peas,potato and nutri nuggets.
Cover and cook about 3 minutes on medium flame.
Add rice and stir.
Now add water and cover the lid and cook till one whistle.
Voila...your tehri is ready,enjoy with your favorite condiments.
