EGG CURRY

                                            Egg Curry



This is the egg curry my husband declares the best and he has eaten in various hotels & places. And that's really a compliment as he seldom says a word of appreciation as he says,"food is good that's why I'm eating without uttering a single word".




Ingredients:

  • 5 eggs
  • 2 medium size tomato(skin peeled)cut into cubes
  • 1" ginger grated
  • 2 medium size onions
  • 1/4 cup oil
  • salt
  • kasoori methi 1 tsp.
  • Red chilli powder 2 tsp,turmeric powder 1/2 tsp.,corriander powder 1 tsp,garam masala powder 1/2 tsp,1 pinch sugar.

PROCEDURE:

  • Boil the eggs and then fry them in 1 tbsp. oil.
  • In a pressure cooker,boil onions with all the masala except garam-masala and sugar till it whistles thrice.
  • Wait till it cools.
  • Now heat oil in a vessel and add mashed masala with peeled &cut tomato & grated ginger and sugar.
  • When it starts separating oil, add  approx. 1 cup water and eggs.
  • When it's boiling,take off from heat and sprinkle Garam masala and kasoori methi.
Note: I make my own freshly ground Garam masala. Grind together 1 Black cardamom, 2 cloves, 1/2" cinnamon stick, !/2 thread mace, 5-6 Green cardamom and 1/2 tsp. Black cardamom.
